Strawberry Oatmeal Bake

I don’t mean to be cliche, but here is a breakfast that will really jumpstart your morning. Rolled oats, quinoa, strawberries and cocoa make up this oatmeal bake that is sweet and delicious and full of power. I started my morning with this oatmeal bake, and not only was it filling enough to be a meal, but it gave me the energy I needed to make yoga a part of my morning routine. I am not a morning person at all, so this oatmeal bake really helps me start my day as un-monster-like as possible.

Here’s what you’ll need:

1-1/2 cup rolled oats

1/2 cup quinoa

1/4 cup cocoa powder

1/2 cup brown sugar

1 cup sliced strawberries

1/2 cup milk

1/2 cup water

Preheat oven at 375 F and start preparing your ingredients.

In a 9″x 9″ baking dish, evenly mix the rolled oats and the quinoa so they are evenly distributed.

Then, mix in cocoa powder, brown sugar and sliced strawberries. Gently toss with your hands to make sure all ingredients are evenly distributed in the baking dish.

Then, with the dry ingredients even, mix water and milk together and pour on top of the oats and strawberries. Make sure the liquid mixture is even throughout the dish. Poke at the oatmeal mixture a bit to let the liquid seep into the oatmeal. You can cook right away or wrap and bake in the morning for a quick and fresh meal.

Bake at 375 F for about 30 minutes. When done, all of the liquid will be absorbed and the oatmeal bake will be soft and slightly fluffy to the touch.

Slice and serve warm with honey drizzle on top. The oatmeal bake may last you a few mornings, so make sure to heat and serve warm for the following days. I even made this my dessert for a couple of nights. It is sweet, but gives you quite a natural pick-me-up. Enjoy!
